Vitamin C and its meaning
The chemical name for vitamin C is ascorbic acid. It is a vinyloge carboxylic acid whose salts are called ascorbate. Ascorbic acid oxidizes slightly and is used as an antioxidant. Ascorbic acid is colourless and odourless, water soluble and has an acidic taste.
Vitamin C contributes to the formation of collagen and is therefore also important for a good condition of the blood vessels. In addition, it has a positive effect on the immune system and has an antioxidant effect.
The body can only store vitamin C in small amounts. Therefore, vitamin C must be absorbed daily through food. Particularly rich in vitamin C are Acerola cherries, strawberries, lemons and oranges, peppers and broccoli.
Some groups of people tend to have an increased need for vitamin C. This includes both smokers and people who regularly consume alcohol and athletes who are exposed to heavy physical stress through intensive training.
